Cook it, or Juice it?
Lately, it seems there has been a lot of buzz with raw food, which can be tough to get excited about in late February. Talk to me in April or May, in the warm weather, and I will be all about the raw veggies…
But really, which veggies are better cooked, and which are better raw? VegWeb has a great guide about which veggies are perfectly fine to roast up, and which ones are better as they are. Carrots and sweet potatoes actually are better cooked, because the vitamin A and beta carotene breaks down, and is easier to absorb. Kale and Broccoli are better left raw- so salad or juice are better for these green goodies. Spinach is fine either way!
